Mint Chocolate Cookies
My favorite type of cookie is definitely mint chocolate. Even if you are not a big fan of mint (like me), you will be asking for more of these outstandingly delicious cookies.
Ingredients For 60 Cookies Are: 1 cup unsweetened cocoa powder, 2 cups white sugar, 1/2 cup vegetable oil, 4 eggs, 2 tsp.vanilla extract, 1 tsp. peppermint extract, 2 cups all purpose flour, 2 tsp. baking powder,1/2 tsp. salt, 1/2 cup icing sugar.
Directions:
- In the bowl of a stand mixer combine cocoa,white sugar, and vegetable oil.
- Beat in eggs one at a time, and then add vanilla and pepperment extract.
- Combine the flour, baking powder, and salt together and then stir into the cocoa mixture.
- Cover dough and chill for at least 4 hours (you can also the dough for 3-4 weeks in an air tight bag).
- Preheat oven to 350*F.
- Line cookie sheet with parchment paper.
- Roll dough into 1" balls and roll each ball in icing sugar before placing on the lined baking sheets.
- Bake in the preheated oven for 10-12 minutes.
- Let stand on sheet for 3-4 minutes before transferring to a wire rack to cool.
